Dining question - a la carte pricing

I notice some of the restaurants on Oasis are listed as a set price per person, such as $19 for Sabor and $45 for Izumi but then there are also a la carte prices listed on the menu. How does that work?

Izumi has a fixed price for the hibachi option and a la carte prices for everything else.

To my knowledge, Sabor is now a fixed price on all ships.

Sabor used to be a la carte, you are probably seeing the old menu.
