Casino open times..?

The carnival cruise I'm going on will have only 1 sea day and the rest will be in ports. Does this mean the casino will only be open at night on days at port?

You have it correct based on what I have seen. On port days the casino will typically open between 1/2 hour and 1 hour after departing port. Dealers etc. will be available for table games. Your sea day will have the casino open all day with dealers etc. for table games starting around 10 AM and staying until 2 AM as long as there are players. If too quiet they may shut down some tables earlier.

But if its a premier casino cruise, the slots may be open all nite. Also some islands let the ship's casino stay open during the port time, or part of the port time: maybe Grand Turk, Nassau, private island, etc.
