I have the premium package but don't drink alcohol. Are there any nonalcoholic interesting drinks in the world class bar. My husband will enjoy it in there , will I have to go and get a mocktail at another bar and bring it with me?

I have not sailed with Celebrity yet, booked for January 2024 on Solstice. Everyone seems to love the Martini bar, how easy is it to get a seat at the bar? I don't actually drink alcohol but my husband and I have premium drinks package and he would love to sit at the bar to watch the waiters making him a cocktail. Do they make mocktails? Do people sit all evening up at the bar? Is it easy to get a seat before dinner or are there chair "hogs"? Sorry if that is the wrong term.
