Bulk cooking LCHF

Looking for ideas for bulk cooking for Keto. Breakfast on the run too. My biggest issue is that I work (commute) so much. I am running out the door early and by the time I get back I don't have much energy. Eat out too much for lunch and dinner.

I don't have much experience with Keto, but what I can think of off the top of my head:

 

  • Prep as much as possible on a weekend/day off.
  • Meal plan, have a list of easy to grab snacks
  • Hard cook a batch of eggs - note they will only last about a week, not as long as uncooked eggs (something changes with air permeability of the shell I think)
  • Pre-wash & cut vegetables
  • Pre-cut meats
  • I'm guessing rice isn't allowed, but if you quinoa is low carb you could make a batch ahead for the week and portion.
  • For items that can't be done several days ahead, maybe you can prep those the night before while someone else does the dishes or while putting finishing touches on supper.
  • Pre-portion nuts for a quick snack
  • Make a big batch of shredded meat (beef or chicken) in a slow cooker. You can do a roast or several breasts/thighs and shred with two forks. Have the meat on-hand during the week for soups, lettuce wraps, etc.
