Booking shore excursions and activities

Our window opened up last night to book shore excursions for our Alaska cruise in May. We are traveling with our 2 year old DD and specifically looked to excursions that did not list an age limit. When I went to try and reserve the excursions, she was not able to be selected. I am assuming it is because 0-2 was listed as $0.00. Is there any way to book these excursions online? Should I just book for the 3 of us that it would allow me to and then see about getting her added once on the ship? Or do I need to call and book excursions over the phone, if that is even an option?

 

Also, all of the liquor tastings and Palo brunches were sold out online. Where do I go onboard to see about getting a reservation or being put on a waitlist?
