I'm not sure if this would work for a couple of reasons.

 

At the end of your 1st cruise you will be escorted off the ship to check-in for the next cruise and get your new S&S card and set up your new account. This doesn't usually happen until well after the post cruise excursions have already departed.

 

The excursion you are interested in probably won't get you back to the Miami airport until after the latest Carnival shuttle back to the pier leaves.

 

If you really want to do something like this I would try to find a private excursion, get off the ship early and with all the documentation that you would need to go through customs and check back in later in the day for your 2nd cruise.

 

Keep in mind that you have to be back at the port and checked in for your 2nd cruise no later than about 2:30.

The back-to-back passengers are typically the last people off the ship, and the first back on. You would have to check with Carnival to see if this would work.
