That's all they really care about; their bottom line is actually less since they have collected for 2 passengers and only have to pay your room and board. I would do the courtesy of letting them know the other person won't be sailing when you check-in. But messing with your payment, Express Pass, etc. ahead of time simply runs the risk of unwanted attention or unintended consequences.
