It all depends on the ship, how full it is, and how many cabins are available in the category you're looking to upgrade to. The more availability the lower the price. The less availability the higher the price. I just go to carnival and do a mock booking (up until payment is required) and I can usually see what it will cost to upgrade myself to the next category. Carnival will usually always take more money and pretty much always let you upgrade.
