Even at this late date, I would try to book as much of the entertainment as might be still available.

Has anyone done the signature wine dinner?

I agree pre book all shows. We were on Oasis in Jan. And i saw ppl being turned away at all shows after they had been waiting in line to get in. We didn't try any specialty restaurants. The food was great! Windjammer was better than usual and we loved park Cafe and the cafe in the Solarium.

The Chef's table is a wonderful experience if you enjoy high quality food and excellent wines in intimate setting.;)
