I don't know about other cruise lines but you can purchase bottles of liquor from the ship to have in your cabin on HAL ships. You can order it in advance and it will be waiting in your cabin when you board. You can wait and room service will bring one to you upon request. The prices are not crazy high either.

You can on Celebrity, comes with mixers and a box of mixed nuts.

You also can on Carnival but we found it very overpriced, which didn't surprise me, but we got really tired of going back to our room all the time and making a drink.

You also can on Hal, I have smuggled bottles many times on RCCL and other lines, but since RCCL now has drink package we just get that

I know that you can purchase a bottle from NCL prior to sailaway, not 100% certain about from room service onboard (we did buy a bottle on GSC with our cabana credit and brought that back aboard). I found that I could return to the room, make two drinks, and return to where we were faster than bar service and it gave me some much needed exercise to work off the extra calories I was ingesting on the cruise.
