St. Lucia is the only place we have not planned something for yet and we are traveling with 2 toddlers (2 and 4). The pirate ship excursion is fun, Pigeon Island with Park, beach, ruins, etc could be good, Reduit Beach with water sports, splash Park, restaurants, etc could be good, a walk through the craft and food market by the port could be interesting, the aerial tram could be interesting, and so on.
