How do you know how many ships are going to be at your port?

We are cruising on the Valor in April(Western)during spring break. I am concerned with the amount of ships that are going to be at the ports and the crowds for excursions, specifically Grand Caymans, but the other ports as well. Is there a way to know how many ships are going to be at your port? We are first time cruisers and I am wondering for peace of mind if we should just book our excursions with Carnival until we are more familiar with the procedures? Thanks for your imput.:)
