Chilled Golden Delicious Apple and Peach Soup

 

2 cups Golden Delicious apples, peeled, cored and chopped.

 

1 cup apple juice or cider

 

1/2 cup orange juice

 

1 cup plain yogurt

 

2 cups fresh cream

 

1 tbs. honey

 

1/2 cup dark rum

 

cinnamon

 

nutmeg

 

2 Golden Delicious apples, quartered, peeled and shaped

 

2 peaches, peeled and diced

 

fresh mint

When in season, fresh peaches are always preferred. When peeling a peach, cut a small x in the bottom. Place the pach in boiling water for 1 to 1 1/2 minutes. Remove the peach and place it into cold water to stop it from cooking. The skin can then be pulled off with a small knife. When working with applie garnishes, squeeze the juice from one lemon into 2 cups of water. After cutting the apple, place the pieces into the lemon-water for approximatley 5 minutes. This will help prevent the apples from oxidizing and turning brown.

The Chilled Golden Delicious Apple and Peach Soup that SuiteTraveler mentioned is found in Princess' cook book, Courses. Unfortunately the Chilled Coconut soup is not in their cookbook.
