The lamb dishes I have seen in the MDR are Braised Lamb Shank and Oven Roasted Australian Rack of Lamb, and Lamb Kofta (appetizer). They will be offered at most one time during your cruise, so keep an eye on the menus that they post outside the dining rooms if you don't want to miss out. As for specialty restaurants, there is lamb at Cagney's and Le Bistro, as already mentioned, and also at Moderno (all you can eat lamb chops :p). Cagney's should have Oysters Rockefeller on the menu, I believe those may be the only oysters on board (unless there's something in the Haven restaurant that the rest of us can't have).
