Is there a place I can spread out and build a puzzle for a few hours? Hopefully a place with good lighting and a window nearby. That might work for you. I have only seen that on the Anthem. On the Explorer, there are tables outside on the pool deck. During quiet (non-meal) times, you could go to the Windjammer. There are tables in front of the pub. (don't take a huge puzzle ;) ) There are tables in front of Vintages. There are tables on Deck 4 across from the Tavern Bar, formerly the Aquarium Bar, outside the front entrance of the casino. There are tables at the Schooner Bar.
