This is the stateroom symbol for some of the 4 a's

 

Does this mean ther are 2 upper like bunk beds?

 

All we want to make sure if we have one king or 2 twins we can put together.

This is for carnival, so what is theonly symbol we should be looking for to avoid something like bunk beds?

 

We shouldalso book gurantee correct?

I don't think there are any ships still traveling that have ONLY an upper and lower bunk. All of them have two SMALL, not twin size beds some of which can be pushed together to make one not quite queensize bed.

 

Only book a guarantee if you will be happy with ANY cabin in the guarantee category you book. otherwise book a specific cabin.

Yes that means there are two upper berths and you will have two twins that will convert to a larger bed. If you do a Guarantee with four people in the room, they may assign you a cabin with only one upper and then bring in a rollaway.
