Vegetarian food on Viking

I'm taking a Viking cruise to Alaska on the Orion next summer. I'm wondering what the vegetarian food options are. Is it all unhealthy stuff like Fettuccine Alfredo, or are there lots of non-lettuce vegetables available. (Still recovering from having been served four asparagus spears and eight slices of summer squash as a dinner on the land portion of a cruise tour.)
