Online Check in before final payment

This might seem like a silly question, but our first available online check in date is Dec 31st and our final payment isnt due until Jan 15th.  Will we be able to online check in Dec 31st even if our final payment hasnt been made yet?

You don't mention which line you are sailing on.  I will tell you that, yes, if you are on Carnival, you can check in before you have paid in full.

I sail in January and it says i can check in now. Does it benefit me any to check in this early? Carnival as well

The earlier that you check in, the better chance you have of getting an early arrival appointment.
