Can you tell me when sailing back from the Carribean to Southampton which is better for sun in the afternoon port or starboard

Assuming you are doing this in the winter, you would want to be on starboard side, or aft.  EM

Eastbound across the Atlantic, you should have more sun on the Stbd side. Assuming Great Circle courses, the first days will have sunsets on the port side.

 Not necessarily.  Britannia, Braemar, and Azura all have a TA from Barbados to Soton in March.  EM

And Ventura leaves Southampton for her 35 day round trip to USA and Caribbean on Monday 4th Feb, so will be returning in March.

Yes.  sunrise, sunset, and overhead angle change.
