Chef's Table Dates?

We're sailing on the Vista October 19th, 2019 and made Chef's Table reservations. My son's birthday is October 20th and we're wanting to take him to the steakhouse for that but would be willing to switch it to another day. However, I don't know what date our Chef's Table will be so I don't know when to make my steakhouse reservations for. Is there any way to know this at all or are you just kind of SOL until you get onboard?

I know of no way to ascertain the Chef's Table date prior to boarding.

 

I would reserve the steakhouse now and change it after boarding if necessary.

Depending on demand, the Chef's Table can occur on several different nights... I usually just make the reservations for the specialty dining in advance, and if the CT conflicts with it, then adjust plans as necessary... You could also visit the table that they set up for the steakhouse on embarkation day, and inquire / request certain dates for each.
