Can anyone tell me what brands of spirits are included in the all inclusive price?

Unless Saga change things for the new ships, just what you might call 'house ' brands.  Mostly acceptable in a mixed drink, with proper mixers provided, but I have to say we once tried a brandy after dinner, neat, and it was awful!  The usuals, gin, whisky, vodka and 'brandy' - oh and they usually have tequila for Margaritas and rum for Daiquiris.   Not the good brands you would find on Seabourn,, Regent, etc.  But your per diem price for your cruise is less than them, of course.

Do they serve Courvoisier Brandy or one of that quality?

Probably,  but unless things have changed, only if you sign and pay for it.  Saga's charges for non included drinks have always been reasonable compared with other lines.
