It varies by cruise, ship and location.

These were the complimentary wines on Ovation in early May (Barcelona to Lisbon)

(Plus beer and scotch)

However on the next leg (Lisbon to Amsterdam) they changed.

So take these as an example only

This is a very good question but the short answer as SPK pointed out, it changes all of the time.  I ask for a current list when I board and one shows it in my stateroom within a few hours.
