I juist printed out my boarding pass for our up-comming cruise on the Equinox March 28th & on my wifes print out it says ELITE- PEARL & on mine it says ELITE-ONYX. What does that mean??

I believe the "gems" are the casino loyalty levels. 

 

I shall always be a Pearl, as I only do slot pulls and play the occasional "free" $5 promo credits.

Yep, it means you gamble more than she does.  Onyx has a nice perk, you can get chips at the casino without paying the 5% fee everyone else does.  You can either use these to gamble, or even cash them in, if you just need some extra cash during your cruise.
