You should be ok.  It’s best to allow three hours as Rome airport can be very chaotic.

you need to allow around an hour for private transfer so you need to be off the ship around 7:30.   Just check when the ship will be cleared as docking time can vary, and sometimes storms can make it later particularly in the fall.   We find it best to use a private transfer company such as Romecabs to be sure of an easy transfer. Book well ahead.  

Best advice stay an extra nite and enjoy Rome and a leisurely transfer the next morning or stay at the Rome airport Hilton which has free transport to downtown.

We have often taken flights as early as 10:50 and have friends who have taken even earlier flights.  I agree with Bennybear that is is wise to arrange a private transfer (our go to company is Romecabs).  You would normally be fine having a transfer around 8am although most of the transfer companies will pick you up as early as 7am for no additional charge (earlier transfers might involve an extra fee).  The cost of a transfer really drops if you have 4 or more and we have always found other couples through the CC Roll Call boards.  Personally we like to keep our group to either 4 or 6.

I would echo Caripoo's excellent tip.  If you are planning on taking an early morning private transfer you do want to carry off all of your own luggage.  Relying on the ship's own luggage system might leave you scratching your head on the pier as you search for your luggage.  Although carrying your own luggage ashore can be difficult, it can usually be accomplished with some good planning.  The peace of mind knowing that you have everything in hand is usually worth the aggrevation.
