Private Excursion for Georgetown, Grand Caymen

Looking for any recommendation for an excursion for Georgetown, Grand Cayman for next May, assuming we get to cruise.    We like catamarans and if there is a really good one like Calabazza in Barbados, please do tell.   I think we will be doing a beach day in Cozumel, but I won't rule out a really exceptional beach experience.    I'm retiring from scuba, so that is out, but will do a good snorkel excursion.   As a former diver, I'm not drawn to the stingray excursions as I don't like interacting with wildlife in that manner.
