I did not know that about the no dinner buffets in addition to those fixed times that seem either too early or too late. And DW often prefers the buffet. She says she gets tired of people serving her and long meals.

Remember this is Central Time.  If you're coming from Eastern Time, 5:30 is the same as 6:30 to you.

That would work I guess for the first day, but then you get used to the new time. Almost half of our cruises have been in Europe with a 5 hour or more difference, and I know we adjust to that rather than wanting dinner in the early afternoon.
