I know Cabo has an aquarium, though I haven’t been. Whale watching in the right season. My MIL went on a really cool tour of old mining areas in PV.

Whale watching is great and official city zoos are great, but I'd avoid any private animal encounters; they are horrible abusers of animals. The first one that comes to mind is the "hug a baby tiger" excursion in Ensenada. These places are not legitimate, don't get the animals from legitimate sources and don't treat the animals well. The same is true for the captive dolphin encounters you see a lot in the Caribbean and Mexico.
