What is the current situation with cruise ships?

I'm aware of the controversy.  Hubby and I are booked on a Disney Cruise Line cruise that was supposed to call in Key West in January, but the itinerary has been changed to remove KW and instead double-dip at their private island. We are considering switching to HAL or RCL (for a few reasons, not just KW) which still list KW on their itineraries. What are the chances these ships will actually call in KW?

 Key West has removed nearly all ships from their cruise calendar for both Nov and Dec. (last week it had several ships listed).  I would not get your hopes up that you're stopping there.

HAL 11/21 Nieuw Statendam ITINERARY CHANGE NOTIFICATION:
Due to the Key West, FL port closure and other port restrictions, the Nieuw Statendam 11/21/2021 itinerary has been modified. The call to Half Moon Cay, Bahamas port times on November 22nd has been changed from 8:00 AM - 3:00 PM to 8:00 AM - 5:00 PM. The call to Georgetown, Grand Cayman, Cayman Islands on November 25th has been replaced with Port Royal, Jamaica from 7:00 AM to 5:00 PM. Additionally, the call to Key West on November 27th has been replaced with Nassau, Bahamas from 10:00 AM to 8:00 PM.
