Shore Excursions: Istanbul to Athens

We are booked on the 8/28-9/4 Istanbul to Athens and would appreciate any feedback on excursions folks have taken on this route, especially for these ports of call:  Rhodes (Greece), Bodrum (Turkey), Santorini (Greece)/.  Thanks!

I’d just walk around Rhodes town.  Beautiful place.  And have a beer out of a wellington boot in the square. If you know you know

In Santorini you can pick up a boat at the tender dock for about 15-20 euro that takes you to Oia, where you are met by a bus that takes you along the winding road that goes up to the village.  The boats run fairly often. You can walk around Oia for 1-3 hours and pick up a dedicated bus back to Fira for the trip down to the tender dock via the cable car.  Or, you can take the path down that the donkeys use, if you don't mind walking through what is essentially a donkey potty.
