Where to eat depends on the kind of food you'd like and the atmosphere. I'd be looking at Orchids at Halekulani, maybe Michel's at the Colony Surf, maybe Hula Grill or Tiki's Grill. If you want to see the fireworks you could look at signature prime, as long as you get a table facing the ocean you will see the fireworks. Definitely need a reservation.
