If so do we need to book when we embark? Unable to book restaurants at 1am, we have been left with a couple of late dining times. Thank you. The daily Passages newsletter shows which one(s) are open on any particular day, they are not just open on sea days. They do have lunch menus so the full evening menu may not be available, if there is any item you want that is not available at lunch I would suggest you request it that morning or the night before. Only Chartreuse and Prime 7, only one of them on any given day. Not just sea days, and with special lunch menus (as mentioned above). Pro tip: Get the lunch dessert at Prime 7. Chartreuse & Prime 7 speciality restaurants are open for lunch on Splendor & Explorer, with a lighter lunch menu. Both restaurants are open on sea days; only one on port days (alternating between the two). Compass Rose is not open for lunch on Splendor & Explorer (except for a Sunday Sea Day brunch). On the other ships (Navigator, Voyager & Mariner) Compass Rose is open for lunch daily; not the speciality restaurants. The menu usually has some dishes from the Splendor/Explorer lunch menus and from Pacific Rim.
