First time cruiser....shore excursion recommendations

Hello fellow cruisers,

 

I'm a first timer at this and here's what I'm looking for. We are sailing the Pride in July and our stops include PV, Mazatlan and Cabo. For those of you folks that have been on this cruise before what would be your favorite shore excursions while in these ports. I'm also seeking thoughts on booking outside of the cruise ship. From what I've read on this board that seems like a safe, and economical way to go.
