ParaSailing & Other Excursions in Mexico

Hi,

Need some advice or info. We are sailing to the Mexican Riveria Feb 5th, stopping at cabo, Matzatlan and Puerto Vallarta. We are interested in going Para sailing. Also horesback riding and beachcombing. Anyone have any suggestions or websites we can check out?
