I've sailed on Celebrity and Princess and they were amazing in the dining room for giving me vegan (not vegetarian) options. Both had a vegetarian menu and some dishes were vegan, some could be made vegan and if not they would make something special just for me! I was very impressed! Eating in the buffet area you have to be a bit more careful as sometimes the staff don't know every ingredient in the dishes but most times they were very good. Vegetarian dining is quite easy, vegan a little harder but was always totally satisfied with my meals, fine dining even! On Princess the Head Maitre d showed me the next days menu each evening so they could have a bit of a plan for the next night.
