  1. In all likelihood, the proofed, unbaked rolls are either egg washed or sprayed with water before the seeds are applied to get them to stick, but during the baking process, as the crust forms, inevitably some of the seeds will be loosened and will fall off after baking.

     

    It reminds me of the story told by a baking instructor who, as a young man, apprenticed in a Swedish bakery. There is a traditional Swedish cookie that has a whole almond or hazelnut in the center, and it must be firmly pressed in before baking so it stays on the cookie. Although he was making them correctly, he kept getting yelled at by his boss because the ones that went into the store for sale were often missing the nuts. Finally, he discovered that the store clerk (a young lady) responsible for putting the cookies on a display tray for sale in the store was picking off and eating the nuts!

     

    Let's hope our missing pumpkin seeds aren't going that route!

  2. I love the pumpkin rolls on Royal Caribbean cruises. We are on Oasis next month. Hope they are as wonderful as ever!

     

    I am becoming more hopeful...

     

    It seems many have seen the rolls with pumpkin seeds. We may need some adhesion type product to keep the seeds from falling off though. I will let you know how they are on the Independence next week as I have not seen a report from that ship yet.
