    We also just returned Sunday from Bermuda on the Summit. I felt that I had more than adequate accommodation of my GF dietary needs. As mentioned earlier, you'll be given the menu in advance for the MDR so you can make selections. Only one dish was disappointing: I ordered black salmon with BBQ sauce and the fish arrived plain. The executive chef, with whom I spoke at a cooking demo, said it was because the BBQ sauce was brought from the outside and he couldn't be sure about the ingredients. Thank you, Chef, better safe than sorry! :)Your assisitant waiter will bring you GF bread at dinner and it's readily available in the MDR at breakfast and lunch. They don't keep it at the regular bread stations in the WaterFall Cafe, but if you ask a waiter they'll bring it to you in a few minutes. You can watch them make your omelette cooked to order, there's a poached egg station, and of course lots of green salad, fruit, etc. The french fries looked like they might have a coating so I avoided them, but I could have tracked somebody down to ask I guess. Available desserts always includ creme brulee and ice cream, good GF options, but I crave chocolate and it's frustrating to pass up those luscious layered chocolate desserts. I asked the Asst Maitre D' on the second night of the cruise if I could get flourless chocolate cake as RCCL had provided that for me when I cruised with them, but he failed to deliver. It wasn't a big deal because there is SO much to choose from, but when he approached us on the last night of the cruise I called him on it. He apologized and, lo and behold, a flourless chocolate cake was delivered to my room about a half hour later! Above and beyond, that's Celebrity service. I probably could have had it all week if I'd made a fuss earlier...maybe it's a good thing that I didn't. ;) Relax and enjoy being catered to! Oh, BTW, I don't like beer so I didn't pay attention to GF options. They do have a long list of beer choices, so if they get enough requests for GF beer they'll probably start stocking some.
