Update for any interested.  
 

I spoke with the section head waiter who brought main dining room chef over to speak with me. I tipped them both and he was able to fix an appropriate family style sides that they added to or normal New Years Day dinner.  He even prepared a second helping of peas without pork using curry. (He was of Indian heritage). Delicious. I tipped them both.

Cruise Lines have been doing New Years Day Cruises for decades.  How do they assist Southerners in eating their Black Eyed Peas on New Years Day?  I assume they provide them some way.  Otherwise I may have to take a kitchen tour and show these ship chefs how to do it.
