  1. Food is a very personal thing, influenced by one's background and experience. Standardized recipes that the lines use will taste and look different from ship to ship as the Chefs put their view and translation in.

    Overall, each line gravitates to some kind of cuisine, generally French, Italian, or American. Food budgets are tight. RCCL, at one time allowed $1 per day, per passenger for baked goods (that's based on 4 meals!!!)

    Imho, Holland has been the best, Celebrity second, and the rest- third, based on Mainstream lines.

    Crystal was the line I really enjoyed the food as I saw the artistic efforts and attention to quality.

    I have read your comments, but no one mentioned the budget constraints that the chefs are under. I have been told that RCCL has a budget of $1.00 per DAY per passenger for Pastries, yes, Breakfast, Lunch, Dinner,all together. The food budget looks to be around $7.00 per day per passenger, IMHO. The food is very good based on that information. Raddison uses a budget of over $35 per passenger per day. I enjoy Italian pastries so Princess's bakers are the best for me. RCCL has a Franco/ German flair or at least onboard the Serenade of the Seas, which is alittle tame for me. Each to their own.......Dennis

    As a chef, I understand your problem. Each line has a style and budget, RCI has a french tone with a LOW budget for dessert. Princess has an Italian flair with a higher budget. I have enjoyed both. Princess is better then RCI, but I have yet to try Celebrity.

    On Princess, each ship was different, even though it was to be the same recipes. The Grand Class in point, the Grand was far better then the sister ship, Star.IMHO.....Dennis
