Stopping at Port Canaveral with 2 toddlers (4 and 1.)  Any suggestions?  Easy to get to beaches without needing car seat?

I haven't had a chance to sail on RCL since 2013 on Oasis with my wife.  5 years later, I am towing a 4 yo and 1 yo out of Bayonne for a Christmas cruise (both first time events.) I used to spend weeks on cruisecritic to soak up all the knowledge from you guys to prepare for my cruise, now I have like a week to prepare because life has gotten busy.  I need all the coaching I can get for everything, from parking in Bayonne, checking in smoothly, things to do with kids on Anthem, preparing for Cape Canaveral/Coco Cay/Nassau, etc.  Any and all tips on how to travel smoothly with my toddlers are appreciated.  We are booked for 3 oceanview rooms next to each other (also bringing the grandmothers.)  The site looks very different!

I think Jersey city is west of manhattan, off of Holland Tunnel

Was going to do the park right thing, but considering that our group consist of 4 elderly passengers, a baby and only 2 able-bodied adults, I see your logic in value of convenience. Alas, we are coming in with 2 cars so the convenience does sting a little bit more (twice as much more...) :(

Any particular suggestions for the caraven of 2 cars driving up from Baltimore, with an additional stop to pick up a passenger from a B&B in Jersey City?
