While the recent situation on the NCS Sun was atypical you can find out well ahead of time of any ships that will be undergoing refurbishment/renovation simply by Googleing "Dry Dock Schedule" and the name of the line. This info is available a year or more in advance. Also be aware that the last cruise before and the first cruise after a dry dock likely will have some type of refurbishment work going on.
On the same note, if you want to avoid a situation such as being one of multiple ships in port on the same day (think St. Thomas with 4 or more ships in port on the same day) you can Google the port authority of any port you may be visiting and see the ship schedule a year in advance.
