NCL transfers will drop you off at the convention center in downtown Anchorage. At least they did last year and in 2016.  They will store your luggage there and have shuttle service to the airport several times during the day and into the evening.

I couldn't really hear anything. most nights the club was done around 11pm or so.

i was on the jewel last year in 8060 and the noise level wasn't bad

i've found it depends on the port. In Juneau there are multiple tour providers on the quay that offer tours for whale watching or going to Mendenhall glacier that are less expensive then the ones offered through the ships. In late may there were maybe 20 people on the whale watching tours.  In Ketchikan and Skagway the off ships options are a little more limited.
