You will probably love Stingray City. We own a timeshare in Cayman and have cruised there as well. I can vouch that Red Sail does a great job, but don't know about how they handle cruise schedules. I'm sure you can email them ahead. Most of the dive shops in Cayman have underwater camera's for rent. It could be worth it to rent if you only need an underwater camera for this trip. I have never had any luck with the quality of pictures from disposible underwater camera's.

In 2005, we snorkeled from Chakanaab and loved it. I highly recommend it. Last month, I did a diver excursion and asked one of the divemasters on the boat how Chakanaab was now. He claimed that it is fine. I don't know if that is true, but I would also like to hear from others who have been there recently.
