We just came off of the Oasis New Years cruise. There were over 1500 kids on board (so we were told). I'm not sure if Freedom is the same, but they were open every day from 5-7 for adventure dining, no extra charge. The one night we did it, the kids were taken to windjammer.
The free sessions were 9-12, 2-5, 5-7 (adventure dining), 7-10. We had early dinner and wished we could keep our kids there until 6 and then pick them up for dinner, but that is not possible. Any kids there after 5 will be taken to dinner.
Now for lunch, on port days they have a 9-5 port session and if your kids are there from 12-2 they will be taken to lunch for free. On sea days, they do have. 12-2 lunch session, but then you do pay an hourly charge $7 dollars I think.
The sessions are all just guidelines of which activities they do when. You can always drop off / pick up in the middle of a session, etc.
