Gem ports question

DH and I will be crusing on the Gem in Oct with our son, 10 months. Do you think we can still have a good time without booking any excursions/private tours or a scheduled itinerary? We figure we can come back to Europe in a few years and do the sight seeing intensive stuff, but for now, just strolling around the main attractions or the downtown would be fine.

Anyone still have a great time in these ports just playing it by ear?
