Pre-paid Gratuities Question

We are doing MTD on our upcoming trip. We did MTD our last cruise, also, and here in lies the question. The first night we had one of the worst waiters, ever. He literally threw the food on the table and took plates, before we could stop him. We never sat there again. For the rest of the cruise we had the same waiter and asst and they were wonderful. No problem. They got vouchers and a good extra at the end of the cruise.

 

My question is, if you have a good waiter, but different waiters each night, do you leave a tip on the table for them?

To think because you don't eat in the main dining room every night that your waiter should not receive your money is ridiculous.

I have never once seen money on the table, I think that is tacky.
