Pigtails are commonly used as a "seasoning" in Rice (Bajan Peas and Rice is a standard part of our diet), soups (like breadfruit soup) etc, but a few years ago it became the "thing" to open a road side stand and sell them straight off for people to eat. Haven't seen it much recently but as the article suggests, along with other things, people are probably still cooking them and other people are buying them. The quote was.."Those who delight in island delicacies will want to keep their eyes peeled for street-side stalls serving such delicious (if greasy) snacks as conch fritters, fried kingfish, and grilled pigtails ($2). Just sidle up, and place your order to go, or hang out and listen to calypso on the radio while you order seconds" The Conch fritters are not Conch, it's actually what we call Fish Cakes and they have Salt fish in them. Salt Fish is actually Salted Cod which is mixed with a batter of sorts and deep fried and usually served with a ketchup/hotsauce mixture. Very good. The fried Kingfish can also be Dolphin (mahi-mahi, not Flipper) and flying fish. The best place, most tourist friendly place to find all of this is Oistens Fish Market on the south coast on a Friday or Saturday night. Also Baxters Row in Bridgetown (although more of a local scene). But there are Road Side stands, and Rum shops all over Barbados that serve the "Bajan Delicacies" Enjoy Link to comment Share on other sites More sharing options...
