Grand Cayman Shore Excursions

My niece and her family will be going to GC in April and are undecided about which shore excursion to take.

 

They "did" the stingrays last time they were there. They have thought about a tour of the island but I expressed some reservations as the island is still recovering from the hurricane.

 

Has anyone who has been to GC since the hurricane any advice on what they should do, please?

 

Mum and Dad and 11 yr old son who loves the beach. Could they get to and from 7 Mile Beach by taxi easily. I know that it's only a short stay on the island so they won't have too much time. Also, are the shops at the harbour front open again?
