Aquaspa Cafe recipe?

Hi,

 

I have a client that just returned from the Infinity (and absolutely loved it!) She ate in the Aquaspa Cafe almost every day for breakfast and lunch. Her fave lunch was a grilled eggplant, pepper and some other veges with some type of marinade or viniagrette or sauce? It was a cold plate. She would love the recipe for the marinade. If anyone could offer any suggestions or help I'd appreciate it!

I also love this dish and asked about it. I was told to place vegs. in olive oil with herbs and seasoning for an hr. and than grill.
