Do you still think there will be things open that day even though its a holiday? Still debating what to do exactly when we're there though. Leaning towards doing a beach. Perhaps Emerald Beach, or Accra...still haven't decided... I sailed on the Maasdam in 2007. We arrived in Barbados on Easter Monday. Almost everything was closed down!! This even included near the port area where the ships come in. The shops in the port enclosures were open,but many places in the downtown area was closed. Your best bet is a beach,but you might run into few vendors being open. I didn't know how in the Caribbean many of the islands take Easter seriously so don't expect much open on the Easter weekend (Saturday,Sunday and Monday). There is not much open on Sundays in general to begin with and Easter Sunday because of its religious significance is even more so.
