The chefs from the Pinnacle Grill did the demo and they made the crab cakes that are served as an appetizer in the Pinnacle. They passed out samples after the demo. While they may do culinary exhibitions, this SOE enhancement has not yet been added to the Westerdam. Why it wasn't built in since HAL had obviously planned this area before the ship was complete? I don't know. Perhaps to avoid the ship being delivered late after the shipyard fire. There was a thread a week or so ago with a link to a HAL site which outlined the schedule for ALL of the SOE enhancements for the entire fleet. I am not sure how they did it, but I guess that I will find out when I board her in May for my cruise. You are right, these changes would probably have to be done during drydock/wetdock.
